We’re all guilty of letting those bananas rot to the point of no return – you know, that blackened state where no one will eat them anymore but you’ve no time or energy to get them to the freezer to save them in time?
Well here’s a bit of delicious inspiration to keep those healthy bananas out of the compost (or even worse *shudder* …trash!). Our lovely healthy banana bread recipe is much lower in sugar and a trillion times more delicious than anything you will buy in the store.
Truthfully, I’ve made banana bread for years but it was always hit or miss because I never wrote down the recipe, preferring to ‘wing it’. Now that I have a little one and work all the time (or feels like it!) I’ve less time for failures – so a year or so ago I actually started writing down my recipe and refining it a little.
The recipe itself is very flexible, but you will need to slightly adjust the ‘wetness’ of it if you add more or less bananas – and of course depending on how far you let those bananas go – no judgement here! You can also make this with frozen bananas, you may just need to add a little more flour to take up the extra moisture.
If you’re feeling like a special treat – this recipe is great with some choc chips in it! Of course, most of these ingredients are available at the bulk produce store so try and reduce your waste as far down as you can!

This bread has no preservatives (YAY) so make sure if you have not eaten it on the first day, slice it up and pop it in the freezer in single serves. To reheat, pop a slice in the toaster and serve with butter or peanut butter!
